Potato galette, sautéed scallop and Dublin Bay prawns with a mussel and saffron flavoured vinaigrette

Poularde pochée aux morille et vin jaune, Royale de foie gras, legumes de printemps cuit au bouillon

Corn fed chicken, poached in white wine and morel mushrooms, served with a savoury foie gras custard and spring vegetables cooked in consommé
