Mike Caddy – Proprietor
“I wanted to create a restaurant that had something for everyone in a spectacular environment.”
Mike has been in the hospitality business longer than he has not. After fifteen years in the UK hospitality industry followed by a spell in the luxurious Carmel Valley, Mike returned to his native shores. He had a vision to bring together a unique approach that combined the extraordinary drama of the South Coast of England, exquisite classic cuisine and attention to detail, served in a laid back Californian style. The result is PEBBLE BEACH!
Pierre Chevillard – Executive Chef
Pierre has been a chef for several decades and he’s still in love with food today as he was growing up in one France’s Gastronomic centres, Le Couteau, near Lyon. Over the years he’s gained quite a fan club and held a Michelin Star for more than 26 years. After 14 years at Pebble Beach he has decided it is time to slow down and handed over the reins to Nick St Peter. Not being one to take things all that slowly though Pierre runs our Friday Night Gourmet Fish & Chips from Petit Pebbles. Mike Caddy, Proprietor of Pebble Beach is delighted to have Pierre’s continued support in exciting new future developments.
Karl Wiggins – Head Chef
Karl Wiggins joined Pebble Beach as Head Chef in February 2018. Local to the area Karl was educated just up the road at Arnewood School, before going to Bournemouth and Poole College to being his chef training. He then took on the role of Commis Chef for Alex Aitken at the award winning, Michelin-starred Le Poussin in Brockenhurst, whilst finishing his studies.
Rising through the ranks to Chef de Partie, Karl spend some time in the west country before returning to Le Poussin, in Parkhill Hotel for a short while until taking on the reins of Simply Poussin as Head Chef of this two rosette brasserie from 2001-2004. Looking to expand his role further Karl became Head Chef at The Mill at Gordleton and spent over 13 years with Liz Cottingham and her team. Classically trained Karl brings his passion for fresh, seasonal home cooked food sourced from local suppliers to the Pebble Beach menu.
