Mike Caddy – Proprietor

“I wanted to create a restaurant that had something for everyone in a spectacular environment.”

Mike has been in the hospitality business longer than he has not. After fifteen years in the UK hospitality industry followed by a spell in the luxurious Carmel Valley, Mike returned to his native shores.  He had a vision to bring together a unique approach that combined the extraordinary drama of the South Coast of England, exquisite classic cuisine and attention to detail, served in a laid back Californian style.  The result is PEBBLE BEACH!

Pierre Chevillard – Executive Chef

Pierre has been a chef for several decades and he’s still in love with food today as he was growing up in one France’s Gastronomic centres, Le Couteau, near Lyon. Over the years he’s gained quite a fan club and held a Michelin Star for more than 26 years. Pierre also runs our Friday Night Gourmet Fish & Chips from Petit Pebbles.

David Chenesseau – General Manager

David joined the management team here at Pebble Beach in early 2015.  Trained in catering & hospitality at Chartres, France for four years before moving to the UK when he was 20 years old.  He worked at the Auberge de Lac, Brocket Hall before spending nine months in Cyprus.  He joins Pebble Beach after eight years at Chewton Glen.

Zac Hypolite – Sous Chef

Zac joined Pebble Beach in 2016 on a temporary basis to help out the kitchen team.  He proved an invaluable asset to the team and came on board full time as Chef de Partie rising fast through the ranks to Sous Chef in April 2017.  He began his is career in the kitchen at West Beach in Bournemouth in 2010 and quickly developed a passion for cooking seafood – a perfect match for PB.

When not in the kitchen you can usually find Zac fishing or in the gym!

Chrstophe Cluzan – Assistant General Manager

Christophe Cluzan joined the front of house team as Assistant General Manager at Pebble Beach in 2014 .

Originally from Toulouse, France, Christophe trained at La Chapelle Saint Martin, a michelin star hotel and restaurant in Lyon, leaving as Head Waiter. He moved to the UK in 2006 and Hintlesham Hall Hotel in Ipswich before gaining the position of Head Waiter at Chewton Glen Hotel.

Christophe’s passions are fine wines, good food, travelling and fitness.

Jo Cayla – Events Manager

Jo Cayla joined Pebble Beach in 2003, just six months after Mike Caddy opened the doors to the the new restaurant.  Before this Jo got a taste for the hospitality industry at both the nearby Chewton Glen Hotel & Stanwell House Hotel.

A familiar face to many of our customers, Jo started work at Pebble Beach as a part time waitress, since these early days she is the font of knowledge and our dedicated Events Manager.
