The philosophy behind our menu is simple, using locally landed fish and seafood alongside seasonal local ingredients delivered directly to our door. By seamlessly blending the traditions of French and English cuisines, our Head Chef, Karl Wiggins and his team create an exceptional Pebble Beach cliff top dining experience.

STATEMENT REFERENCE CALVES’ LIVERS

The safety of our guests is always paramount and to this end, we have engaged the services of a food safety consultant to advise and guide us on food safety matters as well as helping us develop and maintain our food safety management system that ensures that the food we serve is safe.

We have recently had a local authority inspection and maintain our 5 rating – the highest that is awarded.

We have carefully considered the potential risk of serving undercooked calves’ livers – which would mean that the cooked liver is pink – with him, in light of current information relating to the safety of calves liver as well as the importance of cooking it to a suitable temperature to destroy harmful bacteria.

After these discussions we recognise that to attain a safe product, we have to cook calves liver in such a manner that achieves temperatures that destroy harmful bacteria that potentially may be present in the liver. This means that the cooked calves liver may not always be pink.

We take great pride in selecting our shellfish to ensure that they are of the highest quality, the langoustines are direct from Scotland and oysters from the Irish Sea, other shellfish originate from the waters of the West Country.
