Roasted Seasonal Fruit with Homemade Granola & Honey Scented Cream

From the heart of our Clifftop Kitchen into your home, we’re delighted to bring you an amazing Homemade Granola, perfect for the long winter nights round the fire!

Seasonal Fruit

 

Roasted Seasonal Fruit:

Ingredients:

  • 500g English plums
  • 75g butter
  • 75g caster sugar
  • Crushed cinnamon stick
  • Star anise

Method:

  • Preheat oven to 200C:
  • Half & stone plums & place in single layer in a baking tray
  • Mix sugar & butter in a pan until melted together, add star anise and cinnamon to taste
  • Pour mixture over the fruits & roast for 25-30 minutes until the plums are soft, burnished and on the verge of breaking down
  • These only get better after a few days resting in the fridge, so can be made in advance!

Granola:

Ingredients:

  • 100g caster sugar
  • 50ml water/li>
  • 2 tsp vanilla essence/li>
  • 1/2 tsp salt/li>
  • 320g rolled oats/li>

Method:

  • Preheat over to 160C
  • Mix all ingredients together and spread on a baking tray lined with parchment
  • Bake for approximately 45 minutes until golden brown
  • Allow to cool and break up into small pieces
  • The granola can be stored on an airtight container for up to a month if it lasts that long!

Honey Scented Cream:

Ingredients:

  • 500g sour cream
  • Juice of 1/2 lemon
  • 125ml double cream
  • 1tsp honey
  • Juice & zest of 1/4 orange

Method:

  • Mix the sour cream, double cream, lemon juice, orange juice and zest together in a bowl
  • Place in an airtight container and allow to set in the fridge, keep refrigerated until required

To assemble:

  • Gently warm roasted plums
  • Divide plums between serving plates, top with granola and serve with honey scented cream
