Continuing our gastronomic journey of food fusion from around the world, last night we saw our extremely popular French evening return to Pebble Beach. Our exceptionally talented Head Chef, Pierre Chevillard, who originates from France and has bought an exciting additional menu to the restaurant for the evening.
So what was on the menu for our French Evening? We saw a beautiful Potato galette, sautéed scallop and Dublin Bay prawns with a mussel and saffron flavoured vinaigrette followed by a main course of Corn fed chicken, poached in white wine and morel mushrooms, served with a savoury foie gras custard and spring vegetables cooked in consommé. To finish the delightful courses there was a Selection of French cheese and a Trianon (layers of almond sponge, crispy chocolate praline, raspberry jelly and chocolate mousse.)
